Instructions (Using One Ceramic Casserole Per Portion)

Step 1: Sauté the Aromatics

Add 1/2 tbsp butter and a spoonful of chopped onion into your microwave-safe ceramic casserole dish. Microwave on high for 1 1/2 minutes. Stir and heat for another 30 seconds to melt the butter and coat the onion.

Note: Onions may briefly spark in the microwave. Don’t worry. It usually stops once coated in melted butter.

Step 2: Add Garlic, Rice & Broth

Add the garlic, rice, and broth. Cover the dish with a microwave-safe lid or plate and microwave at 50% power for 2 minutes. Stir well. Repeat the 2-minute cycle. Add more broth if the mixture looks dry.

Step 3: Pour in Wine & Flavor Add-Ins

Add 1–2 tbsp white wine and your choice of flavor ingredients:

  • Squash & sage
  • Mushrooms & thyme
  • Bacon, kale & mushrooms

Cover and microwave again on 50% power for 2 minutes.

Step 4: Finish & Serve

If using bacon and kale, add those now and microwave for 1 more minute. Finish with grated Parmesan cheese before serving and enjoy your rich, creamy risotto made in minutes.
